Our team is a veritable melting pot, with people from all corners of the country and pretty much every walk of life. They do have some things in common, though: a passion for food and the uncanny knack for making your experience an amazing one. Ed was born in Honduras, and grew up on the east coast of North Carolina. He has been in the industry 23 years. He has worked both corporate and chef driven restaurants. Some of his most memorable moments were when he opened 23 restaurants from the start and 2 cruise lines over the span of 14 years. It was lots of work but great fun. The thing that keeps him driven in this business is meeting new people and being able to put a smile on their face. He likes to motivate his staff and most of all teach them new things that will make them successful. Locally, he has been a GM for both TAG Restaurant and Viewhouse Eatery, Bar, and Rooftop.
Bar Manager/Cocktail Magician
Born and raised in Japan, Gerard moved to Hawaii at the age of 13. Growing up, his love for cars led him to pursue a career as an Automotive Technician, which he later decided to switch to a major in Travel & Tourism. Gerard started working at multiple restaurants during high school, starting as a dishwasher, line cook and then moving on to the front of the house. He began working as a polisher at the world-renowned Roy’s and eventually worked his way up to bartender. He also helped open and manage a well-known teppan-yaki restaurant from Tokyo in Waikiki. In 2011, Gerard left Hawaii to continue his career in the food and beverage industry and found his way to the Tacos Tequila Whiskey team where his fresh, seasonal take on cocktails is the perfect compliment to Chef Morrison’s food.
